Gilbert Lau opened the Flower Drum on Little Bourke Street in Chinatown in 1975. What began as a modest desire to provide good Cantonese food to Australians quickly evolved into a reputable restaurant that threw food critics into a passion. Gilbert's high standards for himself and his team allowed cantonese cuisine to break into the competitive Australian food industry, eventually leading to the establishment of a Chinese restaurant that could compete with the main European cuisines.
